Do you love lemonade but avoid it because it’s full of sugar? Don’t want to drink it with the artificial stuff that’s not good for you? Who wants that gross powdered stuff? YUK! If you’re like me, if I can’t drink the good stuff  (real juice from fresh lemons) laden with real sugar, I won’t drink it at all.

Listen up because I just made the most amazing discovery! 

I used coconut water to make lemonade and it was the best lemonade I’ve ever tasted. It made me long to gently sway on a porch swing upon a large covered farmhouse country porch while feeling the breeze, listening to the birds, watching the butterflies, and humming Pharrell’s “Happy”. There’s nothing better in the spring. And you have the added satisfaction of knowing that this is actually quite healthy for you. This lemonade is loaded with electrolytes and fairly low in only natural sugars.

That’s right, if you haven’t discovered the benefits of coconut water, and anything coconut for that matter, it’s a superfood, so google it and read up. Coconut water is packed full of electrolytes and nutrients like magnesium, potassium, sodium, copper, zinc,  vitamin C, riboflavin, and thiamine. It is also low in calories, fat, and relatively low in carbs. It has become the new sports drink among athletes.

Be sure to check with your doctor if you are on any medications or have any health issues!!!!

Also, not to leave lemons out….lemons are also super healthy for you. They cleanse your liver, pancreas, gall-bladder, lymphatic system, and are also nutrient-loaded with Vitamin C, malic acid, and have an anti-oxidant effect on the body.

This Coconut Lemonade is incredibly easy, is the yummiest summertime lemonade, with just enough sour, not too sweet, and a hint of coconut. It’s already naturally sweet so no need to add any sugar or nasty artificial sweetener.

Here’s the recipe:

8 ounces of pure coconut water
juice of 1 fresh lemon

OK, well, one more ingredient: Pour over ice! ice

Feel free to add a sprig or Mint or Sweet Basil.

Now, be SURE to purchase 100% pure coconut water. I’m not going to recommend any brands, I have two favorites, but unless the companies want to pay me for advertising for them, I won’t give brand names. (Hint, hint)

So I want to stress how important it is to read labels.

Not just the nutritional label, but read the ingredient list.

It should say: “Pure coconut water”, “coconut water”, or “100% pure coconut water”.

There should be ZERO other ingredients. Coconut water has become a bit of a fad, so many companies are trying to capitalize on this. But most of them add other ingredients, like sugars and artificial flavors, or even “natural flavors” that we don’t know what they are. Beware of those!
